Jello No Bake Cheesecake & Keebler Mini Ready Crust

While I was out buying groceries I saw a box of Jello No Bake Cheesecake. I thought this would be a nice treat for me, Michael and Kevin. I bought fresh Strawberries too. Instead of getting the normal gram cracker pie crust, I went with the mini's. I have never tried them before.

First thing I did was to dice up some of the Strawberries. Then I mixed the ingredients to the Jello No Bake Cheesecake. It says to use a mixer, but since I don't own one, I got out my handy dandy whisk. It says to mix it on low then on medium for 3 minutes. When it started to thicken, I added the strawberries. I made sure that all the strawberries was mixed in really good. I did not want clumps of strawberries all in one of the mini's.

I spooned out the mix into the mini's and then added a strawberry on top.
I put them into the fridge and waited 20 minutes. I called the boys into the kitchen and gave them their treat.

Michael knew he was going to enjoy it so he went ahead and grabbed two of them. =o)

I think using the mini's are way better than making a pie and then trying to cut it. This method is simple. And you don't have to wait as long for it to set up.

Allen, I like the idea of putting them in the smaller pie shells. Easier to make, control portion size, and easier to make a mix of different cheese cakes. Thanks for the idea!
